Our wines
All of our wines are field blends, a deliberate choice to fully harness the maximum effect of our terroir. Once planted, the grape varieties are set, leaving only the weather and climate to shape the character of each vintage.
Each plot is harvested by hand at the exact same time, and co-fermented on the skins in egg-shaped HDPE vats. Following pressing, all wines spend two seasons ageing in these same vessels. The vats provide perfect micro-oxygenation, allowing our unsulphured wines to mature and develop gracefully on the fine lees. As a result, fruit, floral notes, and juiciness are always front and centre. Every wine from Het Lijsternest is crafted to be enjoyed either young or after a decade in the cellar.
